Yamitsuki Cabbage
Yamitsuki cabbage is a Japanese bar snack that is cheap, delicious, and super versatile. Can be used as a snack, a side, an appetizer, or as a standalone light meal.
Ingredients
- ½ head/320g of cabbage, cored and washed
- ½ tsp salt

½ tsp umami-boosting seasoning
- kobucha (powdered kelp tea)
- shio koji
- powdered bouillon
- shio kombu
- bonito flakes
- dashi powder
- miso paste
- 2 tbsp toasted sesame seeds, crushed or 1 tbsp tahini
- 2 tbsp toasted sesame oil
- 2 cloves garlic, crushed
Cookware
- Knife
- Measuring spoons
- Measuring cups
- Kitchen scale
- Large mixing bowl
- Lid or some kind of cover for the bowl
Instructions
- Mix the garlic and sesame oil together and let sit for a bit.
- Put the cabbage in a large bowl. Add the salt and the umami-boosting seasoning. Cover and shake to distribute the seasonings throughout the cabbage.
- Add the sesame oil mixture and the sesame seeds or tahini to the cabbage. Cover and shake to distribute the ingredients throughout the cabbage.
- Serve immediately. Can store for a few days.
