Okonomiyaki
Tastes great, easy to make, helps you poop. Everybody wins. Also very easy to meal prep in large quantities.
Cookware
- Knife
- Cutting board
- Microplane for ginger
- Plastic containers if you are meal prepping
- Mixing bowl
- Stove
- Wok or pan
- Spatula
- Rice cooker if making rice
Ingredients
- 180g/2 cups shredded cabbage
- 60g/½ cup all-purpose flour
- 4g/½ tsp kosher salt
- Black pepper
- 2 tbsp chopped shallots
- 1 tsp grated ginger
- ½ cup chopped mushrooms
- 1 chopped green onion
- 1 egg
- 120g/½ cup water
- Some neutral oil for cooking (high smoke point)
Notes/Substitutions
- If you want to meal prep this in bulk, put everything but the egg, green onions, and water into a container and put it in the freezer.
- The shallots, ginger, and mushrooms can be subbed out for or you can add whatever flavors you want, but I recommend keeping the shallots and ginger at least.
- Stock can be used instead of water.
- You can use the rice starch water) from rinsing rice before cooking, instead of the water.
- I have substituted the flour and the water with a full cup of ripe sourdough starter.
Instructions
- Heat your wok or pan to medium-high.
- Mix everything but the oil together in a bowl, ensuring it is well combined.
- Once your wok or pan is hot, add some oil and immediately add your mixture. Spread until it is evenly distributed. Add oil around the edges of your pancake, gently lifting the sides of the pancake and tilting the wok or pan to ensure it coats the underside.
- After a few minutes, the underside of the pancake should be getting crispy. After gaining a bit of color, flip the pancake. Using a wok this is easy but other pans may make this difficult. I usually quarter it and then clip the quarters if not using a wok.
- Once flipped, drizzle more oil around, ensuring that the underside of all the pieces are coated.
- After a few minutes, the underside will be PRETTY crispy. I don't mind getting a serious amount of color, so you do you. When it is to your liking, serve it over a bed of rice.
