Sherried Mushrooms
simple sherried mushrooms. Lots of recipes out there to reference, but the basic method to cook mushrooms down with shallots and white wine is so delicious and a very versatile side, or excellent with a poached or fried egg on top[1].
An excellent way to use the remnants of some old white wine, I pretty much eyeball this every time.
Ingredients
Instructions
- Cut some shallots and mushrooms up.
- Heat up a cast-iron pan or some other kind on medium-low heat.
- Once hot, put your food into a pan without any oil. Let them cook down for a while until the mushrooms start to noticeably shrink.
- Add a good amount of white wine to the pan. Stir and allow the mushrooms to cook down. Repeat this step until you are happy with the flavor.
