Seitan
This is a great "meat" substitute for vegetarians/vegans that has a significant amount of nutritional value.
Cookware
- Measuring cups/spoons
- Two Mixing bowls
- Dough whisk or fork
- Aluminum foil or parchment paper
- Pot
- Steamer basket
Ingredients
- 1 3/4 cups vital wheat gluten
- 1/3 cup nutritional yeast
- 2 tsp garlic powder/granules
- 1 tsp onion powder
- 2 tsp crushed fennel
- 1/2 tsp turmeric
- 3 Tbsp soy sauce
- 1 tsp molasses
- 1 tsp tahini
- 1 1/2 Tbsp oil
- 1 1/2 cups mushroom or vegetable broth
- 6 cups water
Substitutions
- Instead of tahini, I have done 1 part toasted sesame oil and 1 part peanut butter.
Instructions
- Mix all dry ingredients. In a separate bowl, mix all wet ingredients except the water.
- Make a well in the dry ingredients and add the wet ingredients. Mix with a dough whisk or fork.
- Pour dough into an 18-inch long sheet of aluminum foil or parchment paper. Wrap it up like a burrito to make a lop shape with your seitan.
- Bring the 6 cups of water to a rolling boil in your pot. Add the steamer basket and put the seitan log on top of the steamer basket. Cover the pot lid and steam for 1 hour and 20 minutes. Don't remove the lid.
- Remove log from pot, remove it from the parchment paper, and let it cool for 30 minutes.
- Cut it into the way you want. Either eat right away, refrigerate for a week or so, or freeze on a cookie sheet and then move into a bag.
