Refried Beans
This is straight up from NYT[1], but it's refried beans, so do whatever you want from here.
Ingredients
- 1 tablespoon oil (I used olive, but any light/no flavor oil works)
- 1/2 a medium white onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 (15-ounce) cans pinto, kidney or black beans, rinsed
- 1 chipotle pepper in adobo, finely chopped, plus 2 tablespoons adobo sauce, or 1 tablespoon chili powder
- 2/3 cup vegetable stock
- Salt to taste
Notes
- I added some green chiles instead of the chipotle pepper, and it worked.
- I used the result of cooking 2 dried cups of beans instead of two cans of beans.

- Cast-iron skillet or pot
- Range
- Mixing tool (wooden spoon, spatula)
- Potato masher (or a fork or just an aggressive use of your slotted spoon)
Instructions
- Heat oil over medium heat. Add onion and garlic, sautéing until browned and tender.
- Add rest of ingredients, boil and cook for five minutes or so.
- Mash beans until not totally homogenous. Remove from heat, salt to taste.
