Grilled Cheese Sandwiches
This is done as a meal prep en masse to use up cheese, bread, and optionally onions, too.
Cookware

Meal prep portion
- Cheese grater
- Sheet pan
- Silicone liner or parchment paper
- Freezer
- Tupperware, plastic bag, or other long-term freezer storage

Cooking portion
- Butter knife or offset spatula to spread mayonnaise
- Range
- Cast iron pan, griddle, or skillet
- Spatula
- Microwave (optional)
Ingredients
Meal prep portion:
- 2 slices of bread (I used basic sandwich bread and machine slicer size)

50g cheese
- 1 slice American cheese (~22g)
- Cheddar cheese, grated (~28g)
- 50g caramelized onions
Cooking portion:
- Some mayonnaise to cover sides of sandwich
Instructions

Meal prep portion
- Put down bread, adding American cheese slice, cheddar cheese, and caramelized onions on top.
- Put top slice on and place on silicone liner on sheet pan and place in freezer.
- After a couple of hours, remove them from the silicone plan and add them to storage container and place back in freezer.

Cooking portion
- Remove sandwich from freezer and give time to thaw slightly.
- Preheat your cast iron pan on medium. While thawing, spread mayo on the outside of the cheese end.
- When the pan is hot, add the sandwich cheese side down, on the same side that has spread mayonnaise already.
- Before flipping the sandwich, add mayonnaise to the other side. Wait for cheese to melt or outside of bread to turn golden brown. If the bread gets dark before the cheese melts, turn down your range.
- Flip your sandwich and let it crisp up.
- When finished check the middle for doneness. If not warn, throw in the microwave for a minute.
